The last thing you want to do after a long day at work is cook dinner, we hear you. That’s why we’re fans of quick, minimal dish dinners. Behold sheet pan meals!
This shrimp and veggie duo dinner feeds two:
1 lb Raw Medium Shrimp, peeled and deveined
Juice of ½ a lemon
4 T Butter
2 Cloves garlic, minced
1 Summer squash
1 T Olive Oil
Salt and Pepper
Roughly chopped parsley for garnish
Preheat oven to 350. Wash Shrimp and remove tails. Pat dry with paper towel and set aside
Halve the squash and zucchini and cut into ¼ inch chunks. Mince garlic cloves.
In a bowl, combine vegetables with olive oil, half of the minced garlic, 1/4 tsp salt and 1/4 tsp pepper
Bake vegetables until soft, about 10-15 minutes
Add shrimp, lemon juice, and butter to the pan. Return to the oven for 5-7 minutes.
Top with fresh parsley.
Extra hungry tonight? Steam some rice or boil some pasta as a base for this simple dish.
